Raw Apple “Cookies”

Your equipment will be a food processor and dehydrator
2 lb Red sweet/tart apples (no grainy ones!) – Core and peel

My favorites are Gala, Fuji, Pink Lady and HoneyCrisp

We eat the peels as a snack, and the dogs eat the cores so nothing      goes to waste!

1 C Agave or Honey

1 3/4 C Almonds – Ground fine in a food processor

1 C Golden Raisins

If you like raisins you can add up to 3/4 C more

1/4 C Cinnamon
1. In a food processor slice half of the apples with a slicing disc and transfer to another bowl, the shred the other half with the shredding disc, then add the shredded apples to the sliced ones.

2. Add agave or honey, ground almonds, raisins and cinnamon to the apples and mix well.

3. Using your hands make about 20 discs with the mixture. The discs should be about 2 inches thick and 2-3 inches wide, they will shrink in the dehydrator. Lay discs on dehydrator sheets.

4. Dehydrate at 105 degrees for 24 hours. They should be chewy. Store in an airtight container in the fridge (if you get the chance to put them away!)
