Mediterranean Cauliflower Side Salad

2 heads of Cauliflower – ground fine in a food processor1/2 C fresh Lemon Juice

1C Olive Oil

1Tbsp Black Pepper

3/4 tsp Sea Salt

1 bunch fresh Parlsey – stems removed

1 bunch fresh Mint – stems removed

1 Bunch fresh Cilantro – stems removed

13 oz jar pitted Greek Olives
Mix everything in a large bowl, cover and let sit in the fridge for about an hour for flavors to blend.
**You can play with the amounts of herbs, I always add more cilantro (’cause I LOVE it!)
