Fried Cauliflower “Rice”

1 small head Cauliflower – cored and rough chopped2 Tbsp Coconut Oil

1 small Yellow Onion – diced fine

5 cloves Garlic – minced finely

1 large Carrot – Chopped into small pieces

1 Zucchini – chopped into small pieces

1/4 tsp Sea Salt

1/2 tsp powdered Ginger

1/2 tsp Turmeric

2 Tbsp Coconut Aminos

1 Tbsp chopped Chives
1. Process cauliflower in a food processor until it resembles rice-sized pieces.

2. Heat the oil in a wok or large skillet on Medium/High heat, add onion and cook until soft – about 5 minutes.

3. Add carrot and zucchini and cook another 5 minutes stirring occasionally.

4. Add cauliflower, salt, ginger, turmeric and aminos and stir to combine. Cook until all veggies are soft

5. Garnish with chives.
