Purple Kale Salad

I have been buying this AMAZING Kale salad for a very long time.  When I moved to a completely different state and could no longer purchase it.  I was forced to figure out how to make it!!  It is a great side dish to just about anything and a great snack to just have ready in the fridge.

Ingredients:

2 bunches of purple kale ( you can use what ever kind you like, it just looks really nice!)

1 Organic carrot (it grew in the ground touching the soil, get organic!)

1 Cup raw sunflower seeds ( you can use roasted and salted, I’m a control freak and like controlling what goes into my food – even down to the salt content)

Sesame Seed oil

Grape seed oil (This doesn’t have a strong flavor like EVOO, it won’t over power the other flavors in the dish)

Salt & Pepper to taste

  1. Chop or hand shred the kale and WASH IT!  Again with the growing in the ground thing and being touched by many hands before you took it home.
  2. Peel the outer layer off the carrot (put the outer peel into your compost!), and then continue to peel the carrot into long thin strips. Chop those strips into smaller pieces.  It doesn’t have to be pretty just a rough chop will do.  Add to the kale.
  3. Drizzle with Grape seed oil and add 2-3 Tablespoons Sesame Seed oil (to taste) and mix well.  I’ve found that my hands work the best!
  4. Sprinkle with sunflower seeds and Salt and pepper to taste.
